I am in search of a good creamy Caesar dressing. It can't be too salty and not vinegary like most of them I have had. On the plus side since I use very little salad dressing the calorie content doesn't count and I actually like the taste of anchovies. Either the salt content is way too high or it's just almost bitter with vinegar. I like Don Pablos' creamy caesar dressing. It's just not available in stores.

Any suggestions?

CREAMY CEASAR SALAD

1 c. salad oil
1 clove garlic, pressed or minced
1 egg
1 tsp. Worcestershire sauce
2 tsp. anchovie paste (optional)
2 tbsp. lemon juice
Dash of pepper
Romaine lettuce, torn in bite size pieces
Croutons
Grated Romano cheese

Place dried lettuce in bowl. Blend first 7 ingredients in a blender Blend, pour over lettuce and coat leaves. Add croutons, sprinkle with cheese.

thank you dear. I was looking for bottled because it has a longer shelf life but I see the advantage of DIY - I can adjust the amounts of stuff in it (or add a wee bit of sugar to take the bite away).

Ok - so where do I get anchovie paste?

Cardini's is without a doubt the best store bought brand out there. We use it at work for our wraps and Caesar salads. You can also find anchovie paste in the grocery store on the same shelf as tuna fish.

Thanks for the info. I could make it myself but ya know I'm just lazy - I wanna find a really good one that I don't have to make.
